Samosas are a delicious Indian snack that are enjoyed all over the world. They are a popular street food and are usually served with tamarind or mint chutney. Samosas are made by stuffing a crispy pastry shell with a spicy filling of vegetables, meat or a combination of both. They are then deep fried until crispy and golden brown. In this blog, we will be sharing a recipe for vegetable samosas.
Ingredients:
- For the pastry:2 cups of all-purpose flour
- 1/2 tsp salt
- 1/4 cup of vegetable oil
- 1/2 cup of water
For the filling:
- 2 potatoes, boiled and mashed (quantity as your wish)
- 1/2 cup of green peas, boiled
- 1/4 cup of chopped onions
- 1/4 cup of chopped carrots
- 1/4 cup of chopped green beans
- 2 cloves of garlic, minced
- 1 tsp of grated ginger
- 1 tsp of cumin seeds
- 1 tsp of coriander powder
- 1/2 tsp of turmeric powder
- 1/2 tsp of garam masala
- 2 tbsp of vegetable oil
- Salt to taste
Instructions:
- Start by making the pastry. In a large mixing bowl, combine the flour and salt. Add in the vegetable oil and mix until it resembles breadcrumbs.
- Gradually add in the water, mixing well until the dough comes together. Knead the dough for a few minutes until it becomes smooth and elastic. Cover the dough with a damp cloth and set aside for 30 minutes.
- In the meantime, make the filling. Heat the vegetable oil in a large pan over medium heat. Add in the cumin seeds and let them sizzle for a few seconds.
- Add in the onions, garlic and ginger and sauté until the onions become translucent. Add in the chopped carrots and green beans and cook for a few minutes until they start to soften.
- Add in the boiled and mashed potatoes and green peas. Add in the coriander powder, turmeric powder and garam masala. Mix well and cook for a few more minutes. Season with salt to taste.
- Preheat the oil for frying in a deep pan over medium heat.
- Divide the dough into small equal sized balls. Roll out each ball into a thin circle. Cut each circle in half.
- Take one half and fold it to form a cone. Seal the edges with a little water.
- Fill the cone with the vegetable filling, leaving some space at the top.
- Seal the top of the cone with a little water and press down firmly to seal the samosa.
- Repeat with the remaining dough and filling.
- Once the oil is hot, carefully drop the samosas into the oil, a few at a time. Fry until they turn golden brown on both sides.
- Remove the samosas from the oil with a slotted spoon and drain on paper towels.
- Serve hot with tamarind or mint chutney.
